Moving in can sometimes be a bore, having to redo almost everything from scratch, and then learn new stuff. Hmmm… for want of a better blog, I’ve decided to go with WordPress.

Fast and easy tom yam. Preparation time approximately 30 minutes. Serves 4.

Chicken Tom Yam

  • 4 chicken wings or half a chicken
  • 1 tomato – quartered
  • 1 red chili – seeds removed and sliced diagonally
  • 1 stalk of lemon grass – smashed
  • 2 pieces of kaffir lime leaves (daun limau purut)
  • 1 Indian onion (Indian onions are preferred over Australian onions simply for the sweetness and character) – quartered
  • juice of 2 limes
  • Tom Yam stock granules
  • 1.5 litres water
  1. Prepare chicken by removing fat but leaving the skin on.
  2. Using a pestle and mortar, crush the lemon grass. Crush also the kaffir leaves with some salt. Marinate the chicken with this mix in a pot.
  3. Add water and quartered onion to the chicken and bring to boil over high heat. Do not stir.
  4. When it starts to boil, bring the heat down to low heat, add Tom Yam stock granules, sliced chili pieces and lime juice. Simmer until done.

Serve with chopped coriander.

Just met up with guys who are handling this resort and have been given the best dive & accommodation rates ever for Perhentian Island, Malaysia.

Imagine this, a dive and stay 3D/2N package for the steal at RM 648 per person. What does it include?

  • 5 dives,
  • Accommodation,
  • Meals (Breakfast & Dinner), and
  • Return boat transfer.

Here’s a price comparison, against what you’d be paying if going on your own:

  • RM90 per dive x 5 = RM 450 per person,
  • Boat transfer (return) = RM 100 per person,
  • Accommodation: between RM 100 – RM 450 per night,
  • Meals for 2 persons on average comes easily to RM 100/3 meals per day.
  • Whole trip would set you back at least RM1500

Messy blog? Macam tempat kucing merempat is it? I think so too. Hang tunggu la, kita dok cari the best template lagi la. In the mean time…

My Chom had the flu yesterday, so dapat MC and I rushed over from Subang to take care of her. Rushing from Subang meant trying to get to her place in under 2 hours which I didn’t. RapidKL as usual late, and then KTM Komuter pulak slow macam siut. When I finally got to Angkasapuri stop, Chom was already waiting for me (after her visit to the clinic).

Went to the wet market, got half a chicken and some fresh herbs. Got back, took care of Chom then terus gi prepare Nasi Ayam special. Here’s the recipe:

Nasi Ayam Special (serves 2)

  • Half chicken, cut to 8 pieces
  • 1 teaspoon Tumeric powder
  • Ginger (3 inches), julienne
  • 3 x shallots, julienne
  • 1 stalk Lemon grass, crushed
  • 1 x chicken stock cube
  • 1 cup rice
  • 2 screwpine leaves (daun pandan)

Prepare chicken, remove fat (set aside). Marinate with salt, pepper and tumeric powder.

  1. Wash rice, and leave to soak for 10 minutes.
  2. Heat pan (medium heat), add a teaspoon of oil; add chicken fat. Sweat chicken fat.
  3. Remove crispy chicken fat (set aside). Add ginger and Lemon grass, fry until fragrant. Remove and strain excess oil, set aside.
  4. Brown marinated chicken, add 1 litre of water and chicken stock cube. Allow it to cook thoroughly and reduce stock with the lid off.
  5. Remove 3 cups of stock. Combine stock, fried onions and lemon grass, and washed rice in a rice cooker.

Chicken can be removed to serve separately or left in the chicken soup. Garnish with coriander and spring onions.

Note: Tumeric powder is used to tenderize the chicken and to give the rice its yellowish tinge.
