Fast and easy tom yam. Preparation time approximately 30 minutes. Serves 4.
Chicken Tom Yam
- 4 chicken wings or half a chicken
- 1 tomato – quartered
- 1 red chili – seeds removed and sliced diagonally
- 1 stalk of lemon grass – smashed
- 2 pieces of kaffir lime leaves (daun limau purut)
- 1 Indian onion (Indian onions are preferred over Australian onions simply for the sweetness and character) – quartered
- juice of 2 limes
- Tom Yam stock granules
- 1.5 litres water
- Prepare chicken by removing fat but leaving the skin on.
- Using a pestle and mortar, crush the lemon grass. Crush also the kaffir leaves with some salt. Marinate the chicken with this mix in a pot.
- Add water and quartered onion to the chicken and bring to boil over high heat. Do not stir.
- When it starts to boil, bring the heat down to low heat, add Tom Yam stock granules, sliced chili pieces and lime juice. Simmer until done.
Serve with chopped coriander.
